Why do Geillis’ eyes change color in the Outlander books?

Outlander book fans know that even the best books haven’t always been consistent. One of the biggest questions for many is how Geillis’ eyes can change color. In one book they’re green, and then in another, they’re blue. Diana Gabaldon has reminded fans recently why that happened.
We’re all human. Authors forget some of the minor details of books, and this is what copy editors are for. Great copy editors will make sure the minor details are right, allowing the author to focus on the book. Get a not-so-great copy editor and details are missed.

That’s what happened with Geillis’ eye color. Gabaldon doesn’t name names but she does make it clear that on one occasion she had a “less-than-excellent” copy editor, which led to the overlooking of Geillis’ eye color.
Of course, over the years, fans have had fun with the reason for the changing colors. Was it a trick of the light when described? Or did Geillis’ eyes actually change color? I know individuals with eye colors that change. Depending on a friend’s mood, her eye color can come out purple!
Plus, we all see colors differently. What one person sees as green, another can see as blue. Just as Supernatural fans about Jensen Ackles’ hair and eye color!
Another fun suggestion is that Geillis makes her eyes change color. She is a witch, after all. But that really is just for fun.
In the end, it wasn’t a deliberate mistake. Just not the right person looking for the right details.
